Brewer's yeast and torula yeast: two different organisms
They are often treated as interchangeable protein sources because the headline numbers look similar. They are different species, and a specification that does not say which one it means is incomplete.

Different species, different sources
BrewPro™ Brewer's Yeast is documented as an inactive dried yeast based on Saccharomyces cerevisiae — the brewing and baking organism, supplied as a feed material.
UtiliPro™ Torula Yeast is documented as a dried Torula yeast and single-cell protein based on Candida utilis. It is a different genus, and it is described in the catalog as single-cell protein rather than in the same terms as the Saccharomyces products.
Where the numbers agree
Both are declared at a crude protein of ≥ 45.0%, and both show a typical range of 45.0–50.0%. Both are non-viable. On a specification sheet written only against protein, they look like the same material.

What the difference means in practice
BrewPro™ carries declared typical values for B-vitamins and nucleotides and a tighter moisture limit, which suits a formulation that buys the yeast for its micronutrient contribution as well as its protein. UtiliPro™ is positioned on its nucleotide contribution and its amino-acid spectrum as a single-cell protein, with a slightly wider ash range and a less restrictive moisture limit.
Neither is a substitute for the other on paper. If a registration or a customer specification names a species, that is the species the material has to be.
Specifying it unambiguously
Name the organism, not just the category. A complete line reads like this:
• Species (Saccharomyces cerevisiae, or Candida utilis for Torula)
• Grade or product type (inactive dried yeast, single-cell protein)
• The property being bought: crude protein minimum and basis, plus any nucleotide or vitamin expectation
• Moisture limit, which is where these two differ most
• Destination market and intended species, so the permitted use can be confirmed
