Yeast protein at 40%, 70% and 80%: what changes besides the number

Protein concentration is the headline difference between the three grades in the food-grade range, but it is not the only one. What remains alongside the protein changes just as much, and that is usually what decides the application.
Declared values are taken from the 2026 PANGOO technical data sheets and product catalogs.

The protein ladder

The food catalog presents its protein products as a ladder rather than a list, with two rungs above the whole-yeast product: protein on a dry basis ≥ 70% as a high-protein base, and ≥ 80% with a nucleic acid limit as the premium high-density grade. The catalog also states the intended progression — whole-yeast nutrition is a practical route for nutrition enrichment without moving directly to 70% or 80% protein concentration.

Why whole-yeast nutrition is a destination, not a stepping stone

NutriYeast™ is specified as whole-yeast nutrition with a natural nutritional matrix at protein ≥ 40%, moisture ≤ 5% and ash ≤ 8%. Because the product is the whole cell rather than an extracted fraction, it carries the rest of the yeast alongside the protein — which is the point when the objective is nutrition enrichment rather than maximum protein density.
It also keeps the longest shelf life of the three at 24 months, and the most flexible packaging, at 10 kg or 25 kg per bag against a single 25 kg bag for the concentrated grades.

Why a nucleic acid limit appears at 80%

Yeast is naturally high in nucleic acids, and concentrating protein concentrates those too. That is why the 80% grade is the one that carries a declared limit, nucleic acid ≤ 2%, together with a typical BCAA value of approximately 20.44%.
For a formulator, this is the practical difference between the two concentrated grades: both are high in protein, but only one has been specified with a ceiling on the nucleic acid fraction. Where a formulation is sensitive to that fraction, or where a high BCAA density is wanted, the 80% grade is the one to specify.

Applications follow the grade

The catalog positions NutriYeast™ for nutrition foods, solid beverages, plant-based foods and bakery; YeastProtein™ 70 for high-protein foods, plant-based meat, meal replacement and protein beverages; and YeastProtein™ 80 for sports nutrition, protein beverages, plant-based foods and premium nutrition.
The pattern is consistent: the 40% grade carries nutrition into products where a whole-food ingredient is acceptable, and the concentrated grades carry protein into products where the protein figure is the claim on the label.

What to specify

For a protein enquiry, state the following:
• Target protein level, and the basis it is measured on — the 70% grade is declared on a dry basis, which is not the same as as-is
• Whether a nucleic acid limit is required, which decides between the two concentrated grades
• Whether the product is the whole cell or an extracted fraction, since that changes both the nutritional matrix and the label
• Shelf life and packaging, which differ between the grades
