Instant dry yeast for low-sugar dough systems
ActiveRise™ is the only product in the whole range that is expected to ferment. It is specified for low-sugar dough, which is a formulation constraint rather than a marketing one — and it is one of only two active products PANGOO supplies.

The unusual product in the range
Nearly everything PANGOO supplies is non-viable: the yeast is used for its protein, its nucleotides, its cell-wall fractions or its flavour. The food catalog's instant dry yeast series is the exception, and so is LiveYeast™ on the feed side. These are the two products where the cells are expected to be alive at the point of use.
That changes what the specification is about. For a non-viable product the question is composition; here the question is activity, and the declared values are written accordingly.

Why low-sugar is a specification, not a label
In a sweet dough the sugar level itself drives osmotic pressure, and a yeast strain suited to that environment is usually the one specified for it. ActiveRise™ is declared for the other case — low-sugar dough — and the catalog lists the products that fall in that bracket: bread, steamed buns, bao, rolls and other fermented dough products.
The practical consequence is that this grade should not be assumed to be interchangeable with a high-sugar grade in a sweet formulation. The catalogue states the intended dough type; substituting across it is a change of application, not a change of brand.
Dosage has a reference point
Most of the food range leaves inclusion to the customer's formulation. This product is one of the few with a stated starting point: the catalog gives a reference dosage of about 5 g/kg flour, and adds that it should be adjusted according to flour, sugar level, temperature and process conditions.
That caveat is the useful part. Activity in a dough depends on all four, so the reference figure is a place to start a trial rather than a fixed instruction.

Storage, and why it differs from the rest of the range
A viable product has a storage requirement a non-viable one does not: the count has to survive to the point of use. Where the inactive products carry a general instruction to keep the material cool, dry and out of sunlight, the active products add the reason. LiveYeast™ on the feed side states it explicitly — protect from heat, moisture and direct sunlight to preserve viability — and the same principle applies to any active dry yeast.
Shelf life separates them, though: ActiveRise™ is declared at 24 months in unopened original packaging, while LiveYeast™ is declared at 18 months — the shorter of the two, which is the more cautious figure for a product whose count has to survive to the point of use.

For a fermentation product the application detail matters more than a specification line:
• The dough type and its sugar level, since that is the declared split
• Current dosage and process — mixing, proofing time and temperature
• Flour characteristics, where they are known
• The market, if the product needs to meet a particular labelling or food-standard requirement
